UChicago dining has made some preliminary progress on offering plant-based options, but there is still a long way to go toward meeting sustainability commitments and student interests. Currently, plant-based mains are isolated to the vegan/vegetarian station and a majority of the 108 students we surveyed strongly agreed that plant-based dining options should be improved. While UChicago Dining has mentioned sustainability commitments, especially on the food waste front and on sourcing from local suppliers, little to no action has been taken to reduce carbon footprint by changing the types of ingredients sourced, despite there being student demand to do so. There have been no efforts to reduce the quantity of animal products, though dining halls have made minor commitments, like cage free eggs.
