There are occasions where the only plant-based options seem to be the salad bar and the vegan dish of the day. It would be nice to have more variety.
Many of the existing options don't taste good, and there's only one available at every meal - so if I don't like the plant-based option, then I feel like my choices are salad/soup or meat.
There is not enough complete proteins offered. Frequently, the dining hall is "out of protein for the day" - when I see 3 different meat options right next to the empty tray. Sometimes, the "vegan protein" has as little 0.7 gr of protein per 4 oz - that is NOT considered protein. And even 1-4 gr is not - if it contains some protein, doesn't mean it is primarily protein. And most frequently it is just beans which is not a complete protein, and it is important for all vegans' health. Tofu, tempeh, amarant, edamame - these are complete proteins.
I think there should be more options that have dairy, like cheese. There is a large population of students that are vegetarian but still consume dairy products.
We don't have enough plant-based meat options. For a school that prides itself on being on the forefront of technology and business and ethics, we should be pioneers on this issue.
I honestly don’t want or like fake meat. Its weird. I want more greens. A Sweetgreen-like concept would be incredible. As would more variety of cooked green leafy vegetables.
